Microwave Peanut Butter Fudge Recipe from the Kitchen of Kalli Verbecky

Every year my mom makes the same combination of holiday goodies for her family, neighbors and friends, and she always makes extras to have on hand and more through the holiday season which I appreciate more than she probably will ever know because I know that during the months of Nov-Jan, it’s always down in the cold storage, waiting for me like a gift from the lawd above. I love the holidays, and I love my mom, and I love her peanut butter fudge!

Peanut Butter Fudge

INGREDIENTS

  • 3 c. sugar
  • 3/4 c. butter
  • 1 (5 oz.) can evaporated milk
  • 1 (7 oz.) jar marshmallow cream
  • 1 (12 oz.) jar peanut butter
  • 1 tsp. vanilla

DIRECTIONS

  1. Mix together sugar, butter and evaporated milk in 3-quart glass casserole. 
  2. Microwave, uncovered, on full power 5 1/2 to 6 1/2 minutes or until mixture comes to a boil. Stir once or twice during cooking period. 
  3. Microwave, uncovered, on full power 3 more minutes, stirring occasionally to prevent it from boiling over. 
  4. Remove from oven and stir in marshmallow cream. Beat about 30 seconds.
  5. Stir in peanut butter and vanilla. Mix well.
  6. Pour into buttered 9×13 pan. 
  7. Refrigerate until chilled. 
  8. Cut into squares. 
  9. Makes about 3 pounds. Can be frozen or store in refrigerator.
