Bacon Wrapped Jalapeno Pepper Bites & Giveaway

With only ONE more football game to endure watch, it’s time to party! Bring on the dips, the chips and appetizers!

For our End of Football Season Party (aka Super Bowl Sunday), my sneak play is blitzing my crowd with Bacon-Wrapped Jalapeno Pepper Bites. Our running game calls for chips and Queso dip, guacamole and cheesy potato skins, but the sure-fire way to score a touchdown is by serving these crispy, Chipolte-flavored, cheesy bites of deliciousness.

Bacon-Wrapped Jalapeno Pepper Bites
2 ounces cream cheese
4 jalapeno peppers, halved, de-seeded
8 slices pre-cooked bacon
1/3 cup Boar’s Head Chipolte Smoked Gouda (approx. 1/3 pound), finely grated, divided
1/2 cup Boar’s Head Chipolte Chicken Breast, thinly sliced then diced

Preheat oven to 375 degrees. Wash and prepare jalapeno peppers. In a medium bowl, blend together softened cream cheese, diced chicken breast slices and half the Gouda cheese. Spoon the mixture into the jalapeno halves and top with remaining Gouda. Carefully wrap a strip of bacon around each pepper and place on a tray sprayed with cooking spray. Bake for 15 minutes until bacon is crispy and peppers are tender. Serve warm. Makes 8 jalapeno pepper bites. Recipe adapted from Boar’s Head Chipolte Chicken Stuffed Peppers.

Need a few more ideas to round out your menu?

We added cooked ground turkey to our basic Cheesy Potato Skins. Bake your small Russet potatoes at 375 degrees for 45 minutes. Remove from oven and cut into thirds. Scoop out enough potato to make a boat. Place on a baking tray, top with ground turkey and grated cheese. Broil at 475 degrees for 3-4 minutes until cheese is crispy. Serve with green onion, crumbled bacon bits and sour cream.

Basic Guacamole

Peel and dice 2-3 ripe avocados. Mash in a medium-sized bowl. Squeeze the juice of one lime into bowl. Add in 1/4 cup cut cilantro and 1/4 cup minced red onion if desired. Add a pinch of salt and a dash of Tabasco and you’re finished!
