3 Easy Breakfast Recipes

I am seemingly always hungry–except when I first wake up. It takes me a while to feel ready to eat, which is a shame because everyone says breakfast is the most important meal of the day. Now that we just started a new year, I am vowing to change this.

To do it right and make the habit stick, I need recipes that will kick-start my morning while also appealing to my 8-year-old, so I won’t have to make two breakfasts. Enter “Hungry Girl” Lisa Lillien, author of eight best-selling Hungry Girl books, including Hungry Girl 200 Under 200 Just Desserts. You might also recognize her from the Food Network and Cooking Channel, both home to her Hungry Girl television show. 

Here, Lisa’s top three easy breakfast recipes–for the hungry girl in all of us. Double the measurements if you’re cooking for two.

1. HG’s Sweet Spiced Apples
150 calories, 3g fat, 22mg sodium, 28.5g carbs, 3g fiber, 24g sugars, 3g protein

2 tbsp. Spiced Latte Flavor Nestle Coffee-Mate Liquid Coffee Creamer

2 tbsp. fat-free plain Greek yogurt

Dash cinnamon

1 cup chopped Fuji apple

In a medium bowl, thoroughly mix Coffee-mate, yogurt, and cinnamon. Add apple, and stir to coat. Enjoy! Makes 1 serving.

2. HG’s Choco-Berry Oatmeal
305 calories, 9g fat, 255mg sodium, 50g carbs, 6g fiber, 19g sugars, 6.5g protein

1/2 cup old-fashioned oats

1/2 cup unsweetened vanilla almond milk

2 tbsp. Dark Chocolate Fudge Flavor Nestle Coffee-Mate Liquid Coffee Creamer

1 no-calorie sweetener packet

Dash salt

1/8 teaspoon vanilla extract

1 1/2 tsp. mini semi-sweet chocolate chips

1/2 cup sliced strawberries

Combine all ingredients except chocolate chips and strawberries in a nonstick pot. Mix in 1 cup water. Bring to a boil and then reduce to a simmer. Cook and stir until thick and creamy, 10 – 12 minutes. Transfer to a medium bowl and let slightly cool and thicken. Stir in chocolate chips, and top with strawberries. Mmmmm! Makes 1 serving.

3. HG’s Nice ‘n Spiced French Toast
250 calories, 7.5g fat, 425mg sodium, 32g carbs, 5g fiber, 15g sugars, 14g protein

1/3 cup fat-free liquid egg substitute

1/8 tsp. vanilla extract

1/8 tsp. plus 2 dashes cinnamon

2 tsp. light whipped butter or light buttery spread

2 slices light bread

2 tbsp. Cinnamon Cream Flavor Nestle Coffee-Mate All-Natural Coffee Creamer

1 tsp. powdered sugar

In a wide bowl, mix egg substitute, vanilla extract, and 1/8 tsp. cinnamon. Bring a large skillet sprayed with nonstick spray to medium heat. Add butter and let it coat the bottom. Meanwhile, coat bread on all sides with egg mixture. Lay bread slices in the skillet, and carefully drizzle with Coffee-mate. Cook until golden brown, 1 – 2 minutes per side. Serve sprinkled with powdered sugar and remaining 2 dashes of cinnamon! Makes 1 serving.
