4th of July Breakfast!
My oldest has a kids’ cookbook that showed 4th of July cakes made with berries and she always wants to make something like that. We usually do it on a smaller scale since there are just 4 of us at our house.
Even though we spent the last two days traveling to my parents’ house, I hated to disappoint the kids, so I headed to the kitchen quickly this morning to come up with a special holiday breakfast. We already had fresh strawberries and blueberries leftover from our car trip, so it was easy to fix a little something for them.
We made “Patriotic Toast”, as it needed a better name according to my 7 year old!

It’s a really great breakfast food too–fresh Italian bread, toasted, and spread with a thin layer of cream cheese. It’s topped with blueberries and sliced strawberries to make a flag print. Very very good and healthy too!
It’s also a great way to let your kids “help” cook, they can decorate their own with presliced fruits. We’ve also made “Patriotic Pound Cake” in the past. Same premise, but with flavored cream cheese and sliced pound cake, it’s great for individual desserts!
