Celebrate Chinese New Year with this Sweet and Sour Pork recipe. The tangy sweetness of the pineapple and tender pork bites are a great way to enjoy a bit of Asia close to home.

Sweet and Sour Pork

Sweet and Sour Pork Recipe

Ingredients
1/2 fresh pineapple, chopped into bite-sized chunks
1 medium onion, coarsely chopped
1 large green pepper, coarsely chopped
1 1/2 to 2 pounds pork loin, cubed
1/2 cup flour
1 teaspoon kosher salt
1 teaspoon white pepper
1/2 cup ketchup
1/4 cup apple cider vinegar
1/4 cup orange or pineapple juice
1/4 cup soy sauce
1 tablespoon cornstarch
1/4 cup water


Prepare all ingredients before cooking. Begin by chopping the pineapple and pepper and set aside in a bowl. Chop the onion and set aside. Cube the pork and place in a large, seal-able bag. Add the flour, salt and pepper, tossing the pork until coated. In a large measuring cup, mix the ketchup, vinegar, juice, soy sauce, cornstarch and water until the lumps have dissolved.

Pork Lightly Browned

Preheat a large skillet or wok and add the oil. Add the pork and stir 5 to 6 minutes until lightly browned. Remove pork from pan onto a large plate or bowl.

Saute Vegetables

Add the onions and saute for 2 minutes. Add the pineapple and pepper and continue to saute for 2-3 minutes, until crisp tender. Return the pork to the pan and add the sauce. Stir to coat.

Simmering Sweet and Sour Pork

Reduce heat and allow to simmer for 5 to 6 minutes or until sauce has thickened. If sauce is too thick, add water, 1 tablespoon at a time. Serve immediately. Makes 6 - 8 servings.
