Stuffed Cookies - Rolo Cookie Recipe
Since Shannon started the stuffed cookie theme around here, I've been dreaming of these - Rolo Cookies! Since winning the Pillsbury Bake-Off in 1990, the Rolo Cookie recipe has been shared from friend to friend. So, now I'm sharing my version with you! Enjoy!
Ingredients
2 ½ cups flour | 1 cup butter |
¾ cup unsweetened cocoa | 2 eggs |
1 teaspoon baking soda | 2 teaspoons vanilla |
1 cup granulated sugar | 1/2 cup granulated sugar |
1 cup brown sugar | 1/2 cup white chocolate discs |
Sift together flour cocoa and soda; set aside. Beat sugars and butter until well blended; add eggs and vanilla. Add dry mixture and blend well. Shape cookies into small balls. (I used a 1/2-inch cookie scoop.)
Press Rolo into center and cover with dough. Roll cookies in granulated sugar. Bake on ungreased cookie sheets at 350 degrees for 8-10 minutes, until tops of cookies are slightly cracked. Cool on racks. Melt the white chocolate in a plastic bag for 30-second blasts in the microwave until smooth. Cut a corner of the bag and drizzle over cookies.
