I love to cook from scratch using fresh ingredients, but it can be a challenge to plan and execute dinner ideas for every day that are delicious, healthy and simple. I’m always looking for recipes to add to my repertoire that fit these criteria. Oh, and if my kids will actually eat it, that’s even better! Here are five recipes I’ve found recently that made the “go-to” list.
This Jamie Oliver recipe has a stunning presentation worthy of company, but was easy to put together – and devoured by my whole family.
I used only one serrano chile, removing the ribs and seeds, so this wouldn’t be too spicy for my little guys.
I’m a big fan of Giada De Laurentiis’ recipes, and this one is no exception. Since it makes 18 taquitos, I freeze half the filling and – voila! – another night’s dinner is taken care of too.
Cheesy Italian-American deliciousness; sometimes I eliminate the meat and add sautéed mushrooms instead. You can also substitute ricotta for the sour cream for a more traditional Italian spin.
You can throw almost anything into a frittata – leftover cooked veggies and/or meat, and any type of cheese that you like. I happen to enjoy potatoes in mine, and my kids love red bell peppers, so this one is a winner.
