Pumpkin Waffles
The mornings are cool and the trees are turning colors. I LOVE this time of year – definitely my favorite.
What says Fall better than pumpkin? My friend Jane has raved to me about her pumpkin waffles for years. I finally got her to give me the recipe this last week!
I made them for Sunday breakfast this week and they were so yummy. I am not a big pumpkin fan but I liked these waffles. They are perfect paired with buttermilk syrup or cinnamon syrup.
I think I would like anything that was covered in buttermilk syrup or cinnamon syrup!
Beware: they are rich!
Pop them on a Halloween plate and you’ve got the perfect Halloween morning breakfast or dinner. Fill up the tummies of those little mummies before you send them out!

Pumpkin Waffles
2 C flour
Recommended for You
2 Tbsp baking powder
2 Tbsp. cinnamon
1 Tbsp. sugar
1/2 tsp nutmeg
1/4 tsp salt
Mix ingredients together, then add:
4 egg yolks (save egg whites)
1 C pumpkin
1 Tbsp vanilla
1 1/2 C milk
3/4 C melted butter
Beat 4 egg whites until stiff peaks form and fold them into batter.
Cook in waffle iron (I used a deep Belgian waffle iron)
Serve with buttermilk or cinnamon syrup
