Paleo Mason Jar Brownies

My recipe for Skillet Brownies are by far one of my family’s favorite dessert recipes.

If you eat pretty clean, you probably miss those brownie mixes in the red box…that rhyme with “Retty Drocker.” I used to make those all the time before we changed our diet. But I haven’t missed them since I created those skillet brownies!

I wanted to come up with a cute version of these that could be taken on the go or given as a gift. These Paleo Mason Jar Brownies are perfect for that! If you fill the jar a teensy bit less than 1/2 full with batter, wait for these to cool, screw on the lid, then you’re good to “go!”

2 eggs

1 cup Enjoy Life chocolate chips + a few extra for sprinkling on top, if desired.

3/4 cup pure maple syrup

1/2 cup melted coconut oil or butter + extra to grease skillet

2 cups blanched almond flour

1 tsp baking soda

1/2 tsp salt

six 4-oz canning jars

Preheat oven to 325 degrees.

Grease canning jars with coconut oil or butter.

Melt the chocolate chips and set aside.

Whisk together the eggs, syrup and coconut oil or butter.

Stir in the almond flour, baking soda and salt.

Stir in melted chocolate chips.

Spoon in enough batter to fill up about 3/4 full (if you don’t want yours to overflow like mine did, probably a bit more than 1/2 full would be good…makes for a good picture, though!)

Place onto baking sheet and bake in oven for 30-40 minutes, until a toothpick inserted comes out clean.

*Keep an eye on it after 30 minutes, though–you don’t want to over cook them!
