It can be very difficult to not overdo it with all the beer and fried food around. I try to enjoy myself and have a little bit of everything, that way I don’t feel deprived and I can still have a good time with friends. I love tacos and to me they scream party food. I was inspired to create an appetizer that would incorporate the flavors of tacos without the guilt of eating lots of fried taco shells : )
I started by browning a pound of ground lean Sirloin. Ground Turkey can be used but when cooking for guys that are obsessed with greasy take out I didn’t want to send their bodies into shock. When the beef is browned add a 1 Tbsp. Garlic Powder, 1 Tbsp. Cumin, 1 Tbsp. Chilli Powder and 1. tsp. Sea Salt.
Stir to combine the flavors and add a 1/2 jar (15 oz.) of medium or hot salsa. Add enough to moisten the meat, you want the mixture thick and not watery.
For the taco shells I used Tostitos Baked Scoops! I love the line of baked chips, I think they stay crisper with dip…plus I can eat more and not feel guilty! Line them on a platter and scoop a Tablespoon of meat into each shell and top with Shredded Cheddar Cheese, a dollop of Light Sour Cream and sprinkle dried Cilantro on top.
Besides being good for you these are so tasty and really fun to eat. Enjoy game day with these little bowls!
