Mexican Stuffed Shells

We love tacos at our house. It’s the only non-kid food that my daughter requests.

(Kid food = cheesy noodles, quesadillas, PB&J.)

I’m always looking for a way to spice up taco night (heh) since it’s a weekly occurrence around these parts.

Our latest recipe test? Mexican Stuffed Shells from The Way to His Heart.

The verdict? Delicious!

Experiment confession: I couldn’t find wheat shells at the store, so I used wheat lasagna noodles and wrapped the filling inside. Otherwise I followed the directions. It was A LOT more work than I expected and FAR more than the original recipe called for. Next time I’ll just buy regular shells and call it a day.
