Ham and Cheese Ziti makes a wonderfully easy dinner that my kids liked so much, I had to make it twice last year. It is so simple to make, and the sauce comes out creamy and delicious. I had to leave out the spinach due to a sensitivity on my part and it was still great.
Mini Ham ‘n ‘Cheese Frittatas make a great breakfast. Because they are already in small portions, it makes a quick-serve breakfast for moms on the go. Extra frittatas were tasty the next day heated in the microwave as well.

If you had turkey or chicken and need to use up some leftovers, I have to recommend my friend Michelle’s Chicken Salad recipe. With a light dressing and lots of fruit, it makes a wonderfully cool spring or summer time meal. We have used pita pockets, croissants, and Hawaiian Sweet Bread with this salad. This is an easy recipe to make ahead, transport and then fill sandwiches for a picnic or outdoor concert too!
Michelle’s Chicken Salad Recipe
- 3 stalks of chopped celery
- 1 cup of red or green seedless grapes, halved
- 1 can (8 oz. pineapple tidbits) reserve the juice
- 1 can (6 oz. mandarin oranges), reserve the juice
- 3-4 cups of cubed cooked chicken
- 1 1/ cups of Mayo
- 4tsp. sugar
- 2 Tbsp balsamic vinegar
- 1 cup of chopped walnuts
Directions: Place celery, fruit and chicken in a large bowl. In a separate bowl mix mayo, sugar, vinegar, 2 Tbsp. reserved orange juice, 2 Tbs. reserved pineapple juice, & walnuts. Pour dressing over chicken mixture & toss well.
