I’ve loved everything so far that I’ve gotten in my baskets so lets hope I don’t ever get olives, I seriously can’t swallow even one. I know….how dramatic. Well, I found a couple different recipies online for kale and I decided to go with a salad. A lot of people commented that kale can be bitter so I was a little leery but it turned out awesome, especially after a good overnight soak!
Ingredients I used: Kale (just a small bunch), a small red onion (from my local farmers market), 1 tsp olive oil, 1 tsp sesame oil, 1 tsp lemon juice (I added a little more for my taste), pinch of salt, sesame seeds.
Wash the kale and then cut out some of the thick center and chop really thin. Sprinkle with some salt and add chopped onions and all the other ingredients. Give it a good mix and let it soak for a while. It tastes so fresh and amazing especially if you leave it overnight in the fridge to soak.
Not bad for my first kale experience 🙂
