This is one of my favorite Thanksgiving desserts of all time. It literally came to my mind when I was told I could not eat gluten anymore. Devastation! However, I’ve experimented and have the perfect substitute to make this a gluten free dessert.
Gluten Free Pumpkin Surprise:
Follow the directions as listed in the link above UNTIL you get to the yellow cake mix of course. This has a really simple gluten free substitute.
Betty Crocker makes a great gluten free yellow cake mix that I can easily find at my local grocery store. It’s inexpensive and it works great in recipes that call for a cake mix. The trick is that you need to use roughly a box and a half of the cake mix as opposed to the one box that the recipe above calls for. The gluten free cake mixes do not include as much mix as regular cake mixes do.
The other trick is to use even more butter on top. Before baking you cover the cake mix with cold slices of butter. Gluten free mixes are typically a little grainer and require a little bit more of the good stuff to make it all stick together. Don’t hesitate – get nuts with the butter. Last time I made this I used a stick and a half! (You’ll belly will thank me!)
Done! No one will be able to tell the difference, and your gluten free friends will have a delicious dessert!

Apple Crisp is another dessert that I love. This dessert screams fall and Thanksgiving. If you are anything like me, I am all about the streusal topping. Here is the recipe that I use for gluten free apple crisp. I adapted it on my own, and you can do the same for just about any Apple Crisp recipe that you have.
- 4 cups sliced apples (we peel the skin off)
- 1/2 tsp cinnamon
- 2 TB butter
- 1/3 c. sugar
Spread across the bottom of a 9×9 pan
(note: depending on how sensitive your gluten allergy is you may need to ensure that you are using certified gluten free oats and brown sugar)
- 1 box Betty Crocker Gluten Free Yellow Cake Mix
- 3/4 c. oatmeal
- 3/4 c. brown sugar
- 1/3 c. soft butter
Cover apple mixture with streusal topping and bake at 350 degrees for 45 minutes. Keep an eye on it towards the end to make sure that you don’t overcook.
