This is one of our favorite recipes for the holidays and a fun twist on a holiday tradition. The gingerbread cookie is unique, eclectic, flavorful, and definitely a dynamic icon of the Christmas season. It stands to reason why it is one of the most popular cookies during the season.
Gingerbread cookies can be shaped, molded, decorated, paired and adorned with an array of different styles from frosting, sprinkles, white chocolate to ornate candies. What’s specifically wonderful about this gingerbread cake mix cookie recipe is you don’t have to make the cookie dough using 10+ ingredients, you don’t have to wrap it in plastic wrap and store in the refrigerator overnight, and you don’t have to tenaciously wait, watching the cookies bake in the oven making sure they don’t overcook (not a fan of the over-crunchy gingerbread snack). Gingerbread Cake Mix Cookie Recipe
1 box spice cake mix
1 egg
1 stick butter (softened at room temperature)
1 cup white chocolate melts
Gingerbread Cake Mix Cookie Instructions
1. Preheat oven to 350°.
2. Mix cake mix, egg and butter.
3. Pour entire batter out on a parchment lined cookie sheet and smooth with greased hands to 1/4" thick.
4. Bake at 350° for 9-12 minutes.
5. Allow to cool but not completely before using a gingerbread man cookie cutter to cut out cookies.
Once cooled completely, melt white chocolate according to package directions. Pour melted chocolate into a small frosting bag, snip the tip and decorate your gingerbread people! Using melted white chocolate instead of royal icing is a gingerbread cookie game-changer.
