This is one of our favorite recipes for the holidays and a fun twist on a holiday tradition. The gingerbread cookie is unique, eclectic, flavorful, and definitely a dynamic icon of the Christmas season. It stands to reason why it is one of the most popular cookies during the season.
Gingerbread cookies can be shaped, molded, decorated, paired and adorned with an array of different styles from frosting, sprinkles, white chocolate to ornate candies. They are loved by kids while at the same time being loved by adults. What’s specifically wonderful about this gingerbread cake mix cookie recipe is you don’t have to make the cookie dough using 10+ ingredients, you don’t have to wrap it in plastic wrap and store in the refrigerator overnight, and you don’t have to tenaciously wait, watching the cookies bake in the oven making sure they don’t overcook (not a fan of the over-crunchy gingerbread snack). This recipe also made our list on our guide to Christmas recipes.

Can You Make Gingerbread Cake Mix Cookies Without Butter?
There are a few clever butter-substitute hacks for gingerbread cake mix cookies that will still provide the traditional flavor. An important reason why butter substitutes are better than egg substitutes is because some of them provide additional flavor profiles to your cookies. For example, instead of eating a two-dimensional cookie with sugar and flower, you can use option 1 below and get a creamy cheese flavor hitting the pallet. The below options are for the recipe above. If the cake mix recipe you use calls for more butter, adjust these ratios appropriately.
Cake Mix Butter Substitute # 1:
4 ounces of cream cheese softened + 1/4 cup of butter
Cake Mix Butter Substitute # 2:
½ cup of heavy cream. Expect dough to be a little stickier than usual. If it is too sticky, try using a little more cream.
Cake Mix Butter Substitute # 3:
1/4 cup of unsweetened apple sauce + ¼ cup of vegetable oil
Cake Mix Butter Substitute # 4:
¼ cup fruit puree (any flavor you desire!) + ¼ cup of vegetable oil
