It started with my great-grandmother giving me a restaurant knock -off cook book called Top Secret Recipes Unlocked by Todd Wilbur. I didn’t care for most of the recipes but they did have some famous fried onion rings, and since making those, I’ve come up with the way that works best for me.
Using both of those, we started doing fried pickles the same way and everyone that tried them said they tasted pretty good. (I don’t eat pickles, they’re gross!) We also tried fried bananas the same way. (I don’t eat those either)
Bread Crumbs(Italian ones are our favorite)
Oil (We usually use vegetable or canola, but this last time we used corn and it worked well, check out Wisebread for a great oil comparison)
Mozzarella(Block or String Cheese)
Anything else you want to fry
- Set up your assembly line. Have a bowl of the eggs, whip them. Also have a bowl of the bread crumbs and a plate with everything you are going to fry. Put a fork into each bowl, and have tongs ready. Have a plate with a paper towel on it. Put your oil into your frying pan, it should be about 2 inches deep. Heat the oil at a medium level.
- This part works better if you have help in the kitchen. You dip whatever, we’ll say the mozzarella, into the egg, then move it into the breadcrumbs. Make sure it is fully covered.
For the mozzarella sticks and onion rings they need to be dipped twice, so after the first time put it back in the egg and then back to the bread crumbs. The pickles only needed one dip.
- After they are battered, place them into the oil. The oil should simmer when there is stuff in it. Keep an eye on the cooking, and flip them over when the sides look golden. Give it just a little bit of time on the other side and then put them onto your plate with the paper towel.
Now you can make all of your favorite appetizers at home. I also like to make some tomato sauce for the mozzarella sticks. You can just buy a jar or use a can and add seasoning. I never make any of this unless I have company, because it’s easier to make when you have help and it’s less fattening if you aren’t the one eating all of it!
