My control-freak desire to enjoy the best mashed potatoes every year, led to me standing over a hot, steamy stove every year and mashing like a madwoman and then hustling a too-hot pot over to the site our Thanksgiving feast. Usually by the time the turkey was carved, the potatoes were cold and dry.
