Chocolate Oatmeal Cookies

These chocolate oatmeal cookies are our favorite summer picnic dessert.

The recipe is adapted from my cookie making bible: 101 More Things to Do with a Cake Mixby Stephanie Ashcraft. Anytime I use her cake mix cookie recipes, I can proudly display them (instead of covering the plate with tin foil.)  Oh, and they taste really good too!

Chocolate Oatmeal Cookies

  • 1 chocolate cake mix    (Stephanie suggests a yellow or white cake mix. We like to use a chocolate cake mix instead.)
  • 2 eggs
  • 1/2 c butter softened
  • 1/2 c coconut
  • 1 1/2 quick oats
  • 1 c dark chocolate chips

Recommended for You

Mix cake mix, eggs and butter. Stir in coconut, oats and chips. Drop using a melon-ball tool or rounded spoon on to a lightly greased cookie sheet. Bake at 350 for 9 to 12 minutes.

Stephanie Ashcroft isn’t paying me for this little promo, but I really think her cake mix cook books are gems! Because of her cook books, I always stock up on cake mix when I see it for less than a dollar and I am never intimidated by invitations to “bring a dessert.”
