Chocolate Cream Cheese Buckle Recipe

Some of the best food I have ever eaten is from Walt Disney World.  Pretty much anything there is mouth-watering and delicious… especially their desserts.  I have not met a dessert yet that I have not fallen completely in love with.

Because of this, on a recent trip to Disney I picked up “Chef Mickey: Treasures from the Vault & Delicious New Favorites”, one of their many cook books.

Father’s Day is just a few days away, so to me that is great excuse to try out one of the recipes.

I decided to try the Chocolate Cream Cheese Buckle (from Cinderella’s Royal Table @ Magic Kingdom).  It was a home run.  All three of my boys loved it.  I knew Disney wouldn’t steer me wrong.

The below is the recipe makes 24 cupcakes:

For the cream cheese filling you will need:

  • 8 ounces cream cheese (softened)
  • 1/3 cup plus 1 tablespoon granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

For the streusel topping you will need:

  • 1/2 cup granulated sugar
  • 4 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter (softened)

For the chocolate cake you will need:

  • 1 box chocolate cake mix (do not use cake mix with pudding or chocolate syrup)
  • 1 1/2 cups semisweet chocolate chips

For the cream cheese filling:

I started with the cream cheese filling first.  You will need to mix the cream cheese (I used low fat), sugar, egg, and vanilla in a mixer on low speed until combined.  Then set it aside while you prepare the cake.

For streusel topping:

You will need to mix the sugar, flour, and cinnamon in medium bowl with fork.  Once all that is combined, you will mix in the butter until crumbly.  Make sure your butter is soft or it will be difficult to mix.  If using butter right out of the refrigerator, zap in the microwave for 10 seconds.

For chocolate cake:

Prepare the cake as it suggests on the box.  Then, fold in your chocolate chips.

To make the cupcakes:

1. Preheat your oven to 375 degrees.

2.  Fill each muffin cup halfway with the chocolate cake batter.  Spoon  1 tablespoon of the cream cheese filling on top of the cake batter.  Sprinkle streusel  over the top.

3.  Bake 18-20 minutes.  Let stand for 10 minutes before removing from the muffin tin.

Please note that the geniuses at Disney make a slightly larger version, topping it with ice cream and drizzled chocolate.  Since my husband and I are on “diets”, I did not go that route; in fact, as noted above, I used low fat cream cheese.  Turned out wonderfully even without adding all those thousands of extra calories.
