I’ve gone through several phases of completely eliminating sugar from my diet {see: 12+ Tips For Quitting Sugar}. I cut sugar completely out for an entire year, I’ve done several rounds of Whole 30, and in general I just try to stay away from sugar.  But that doesn’t mean that I don’t love a good sweet treat and this Chocolate Coconut Almond Butter is one of my favorites!

I also have a child with a peanut allergy and almond butter has been a great alternative for her.

This almond butter recipe is chocolatey, salty, sweet and tastes delicious with apples {adding natural sweetness}.

Ingredients

  • 1 1/4 Cups Whole Almonds (I buy the 3 lb Kirkland brand from Costco)
  • 2 TBS Cocoa Powder
  • 2-3 TBS Coconut Oil (Can also use unsweetened coconut flakes)
  • 1/4 tsp Kosher Salt

(Alternate: For the full sugar version just add 3 TBS of sugar to the recipe)

Instructions

I use a Blendtec blender with a Twister Jar for this recipe.

  1. Add ingredients to Twister jar in order listed, and place Twister lid on jar.
  2. Hold Twister lid with one hand, and with other hand set on a Medium to Medium-High speed. Run for 40 seconds, turning Twister lid counterclockwise during blending.

Just Add Apples!

We spread this almond butter on apple slices and it’s PERFECT!
