Chewy Chex Mix Recipe
Having a party or need a kid-friendly treat to take to a neighborhood gathering? Who doesn't love Chex mix? This chewy Chex Mix Recipe is from my neighbor, Lisa, who graciously shares it with you!
What's the secret? This recipe has coconut to make it chewy and almonds for a good crunch. Then, add the Golden Grahams for a s'mores-y flavor. Yum! It's coated with a sweet candy-coating-like syrup that keeps it all together like a caramel popcorn ball. Which gives me an idea - you could make this into balls and gift it that way, too! Either way, it's certain to be gone before anyone remembers the shape!
Chewy Chex Mix Recipe
3 cups corn Chex cereal
3 cups rice Chex cereal
6 cups Golden Grahams cereal
1 cup coconut
1/2 cup slivered almonds

Sauce
1 stick (1/2 cup) butter
1 cup sugar
1 cup corn syrup
Mix the dry ingredients together in a large mixing bowl. In a medium sauce pan, combine the butter, sugar and corn syrup. Boil on medium heat for 2 minutes. Sauce will be very bubble and thick. In candy-making terms, you're almost to thread stage. Remember, it's hot sugar so be careful as you pour over your cereal mixture. Toss to coat and store in air-tight container. Optional ingredients: We've added small pretzels and honey roasted peanuts for variety.
