This incredible recipe came from the kitchen of my friend Sierra. Apple Streusel is more of a fall favorite yet I often find myself making this dessert in the spring! It's amazing all year round, really. It comes together quickly and easily and is best made in the morning or the day before you want to eat it (so it has plenty of time to cool and refrigerate). That's the only downside-I'm not good a waiting to eat something this delicious.
Apple Streusel Cheesecake Bars
- 2 C Flour
- 1/2 C Brown Sugar
- 1 C Butter (softened)
- 2 (8oz) blocks Cream Cheese
- 1/2 C Sugar
- 2 Eggs
- 1 tsp Vanilla
- 3 Granny Smith Apples (peeled, cored & finely chopped)
- 2 Tbsp Sugar
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 C Brown Sugar
- 1 C Flour
- 1/2 C Oats
- 1/2 C Butter (softened)
*optional: 1 Jar Caramel Topping
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender or fork until mixture is crumbly. Press evenly into a 9x13 pan. Bake 15 minutes or until lightly browned.
While crust is baking, beat cream cheese with an electric mixer until smooth. Beat in sugar, eggs and vanilla until smooth. Pour over warm crust.
In a small bowl, stir together chopped apples, 2 Tbsp sugar, cinnamon and nutmeg. Spoon evenly over cream cheese mixture.
In same small (now empty) bowl, cream together the streusel topping: brown sugar, flour, oats and butter. Crumble streusel topping evenly on top of apples.
Bake for 30 minutes uncovered at 350° F.
*Optional: Drizzle caramel topping on top!
