If there is one thing that says Valentine's Day, it's all the beautiful pink and red treats everywhere. They are pretty to look at, but most are made with a generous helping of artificial food coloring to get that romantic hue. Red velvet cakes are the ultimate example, some using about 1/4 cup of red dye in one cake!
I generally try to avoid artificial colors and flavors anyway, but in this case I have a special reason for avoiding them. I'm going to tell you something that I haven't really talked about publicly: My oldest son has ADHD, with an extra capitalized H. We have seen lots of doctors and therapists, and they have all independently called his hyperactivity severe. I'm telling you this now because there are many reports that artificial colors, especially red dye, can increase hyperactivity. Folks, I do not even want to risk that! While I can't be sure that this theory is accurate, I'd rather be safe than sorry and take a pass on the red velvet cake and bright pink icing, thank you very much.
