Baked Cheesy Bacon Chicken Tortellini

It’s that time of year when I start looking for family dinner ideas that are easy, include multiple food groups, and are warm in my belly.

The return of the school year brings cooler temps and hungrier kiddos, so gone are the days of our dinner plates being half watermelon. (WHAT. Don’t act like you didn’t do it.)

Bonus points for meals that can be assembled with pantry staples and foods that I tend to cook in bulk, so I can have leftovers for easy meals — things like chicken and bacon. If I’m going to cook up either of those, I might as well make enough to stock my fridge.

Because a slice of thick cut bacon, chopped into a salad? OH, HEY. That makes me happy.

Those pantry staples? BOOM.

Baked Cheesy Bacon Chicken Tortellini

This pasta was the star of the show in my cold pasta salad that came on every camping trip last summer (cooked Barilla Collezione Three Cheese Tortellini, thick slices of salami, black olives, mozzarella, tomatoes…so tasty.)

But as I mentioned, it’s not really pasta salad season…at least not at my house.

But it most definitely is tasty, cheesy, bacony, YUMMY season at my house.

Baked Cheesy Bacon Chicken Tortellini

This recipe for Baked Cheesy Bacon Chicken Tortellini is easy to assemble ahead of time and pop in the oven when your dining room table is besieged by hungry children. The Barilla Collezione Three Cheese Tortellini cooks up beautifully in 10 minutes flat and the Barilla Traditional Pesto Sauce adds so much delicious fresh, garlicky flavor that you can truly toss this together and deliver a rich tasting dish to the dinner table.

Here’s how you whip this up!

Baked Cheesy Bacon Chicken Tortellini

Heat 2 tablespoons of oil in a non-stick pan. Pan fry chicken until fully cooked and lightly browned. Remove from heat and chop into bite-sized pieces. Set aside.

Cook 4 strips of thick-cut bacon. Remove from heat, drain excess fat, and chop. Set aside.

Warm frozen peas. (Cook according to package directions, but remove from heat before they are fully cooked. Unless you like your peas super mushy. You do you.)

In a bowl, combine the jar of Barilla Pesto with ¾ cup of Half-and-Half until well combined. Add 1 cup of shredded mozzarella to the sauce. Set aside.

In a 9×13 baking dish, combine the prepared tortellini, chicken, bacon, and peas and mix gently, taking care not to break the pasta.

Pour the sauce mixture over the contents of the baking dish and gently stir to coat the pasta mixture.

Cover the coated pasta with 1 ½ cups of mozzarella and ⅓ cup parmesan cheese and then bake in a 400 degree oven for 15 minutes.

INGREDIENTS

Barilla Basil Pesto
Chicken Breast (1-1 ½ lbs)
