One of my favorite parts of summer is having fresh cut melon filling my fridge. When my kids can see it, they want to eat it.
My normal honeydew melon recipe is cubed melon with a generous squeeze of lime. I found this yummy recipe for a Three Melon Mozarella Salad from Real Simple when looking for a new honeydew melon recipe.
The mozzarella was mild and the basil and salt and pepper were the perfect diversion from a traditional plateful of plain melon. Plus, I can just snip a bit of basil from the yard and it’s ready.
