I’m always on the lookout for fast and easy recipes for weeknight meals, and when I ran across this sweet and sour meatballs recipe from Six Sisters’ Stuff, I decided it was just the ticket.
Yes, it’s just as yummy as it looks. While the original recipe calls for this to cook in a slow cooker for 3-4 hours, I rarely think ahead enough to get dinner into the slow cooker. If you remember, this recipe is even easier.
I made the sweet and sour sauce by combining all the sauce ingredients and boiling it moderately for a few minutes, stirring frequently, before I added the meatballs. Not only that, but I eyeballed the ingredients (except for the vinegar) and it still turned out delicious. I covered the pot, turned it on low, and stirred every once in a while. I added the green pepper about 5-10 minutes before we ate so that they would still be a little crunchy. I put rice into the rice cooker and by the time it was done, so was dinner. The kids absolutely loved it, and with almost no measuring and one pot, I loved it, too.
