Root Beer Braised Sweet Potato Mash

Growing up in North Carolina, sweet potatoes and yams were always on our table. I can’t get enough of these yummy orange, and sometimes purple(!), tubers.  I noticed the North Carolina Sweet Potato Peeps were having a contest to see what you could do if marshmallows were BANNED from your dish.  Look what Apron Strings came up with – Root Beer Braised Sweet Potato Mash!

 

What can you do with a sweet potato casserole without marshmallows?  A lot.

This recipe includes cumin, cayenne, cream cheese and smoked Gouda.  I can’t wait to try this for our Sunday dinner!  My kids may just get the giggles when I tell them I’m going to cook with the root beer.

      Thanks for the great idea! My DH even had input on which brand of root beer to use – he was willing to sacrifice a Henry Weinhart for the sake of dinner.
