Menu Ideas – Brunch Drinks

One of my favorite places for brunch is Ella’s in San Francisco. The “from scratch” menu is one reason you’ll be waiting in line for your meal, especially on the weekend.

When you go out for brunch, the drink options are so plentiful they get their own menu!  What about when you are the host? Do you serve a variety of coffees, teas, lemonades, sodas and mimosas? In addition to any standard brunch drinks, I love to serve a light fruit drink, slush or punch.  Pineapple, orange, mango, lime and cranberry are all great flavors to enhance your brunch. You can also whip up one of these drinks for your next shower or barbeque.

Fair warning – now that these drinks showed up on a “regular” day at home, my kids request a drink menu at every meal!

Lime Slush

2 quarts lime sherbet
2 quarts vanilla ice cream
2 quarts pineapple juice
2 quarts Sprite or 7-Up

Soften sherbet and ice cream and mix together in a large punch bowl.  Add pineapple juice and stir. Slowly add the Sprite or 7-Up and serve immediately.  Makes 24-30 6 oz servings.

Sparkling Grenadine

1 quart bottle grenadine syrup
2-liter bottle Sprite, 7-up or ginger ale
Mix together in a pitcher and serve over ice.  We love this bright red drink during the Thanksgiving-Christmas season too.

Banana Bavarian Slush

2 cups sugar
3 cups water
1 46-oz can pineapple juice
1 can orange juice concentrate
3 mashed bananas
1 20-oz can crushed pineapple
1/2 cup lemon juice
7-Up or Sprite

Create a simple syrup by dissolving the sugar in the boiling water in a medium-sized sauce pan.  In a large bowl, mix together the pineapple juice, orange juice concentrate, bananas, pineapple and lemon juice.  Add syrup and stir until combined.  Store in zip-tight storage bags and allow to freeze overnight.  Remove from freezer up to 30 minutes prior to serving and place into punch bowl.  Break into chunks with a fork and add soda.
