In my opinion, anything is good if it accompanies a good tomato, some basil, and a soft cheese. This green beans recipe from The Best Recipe is no exception.
First, boil your green beans. Place them in a serving bowl, and add 1/2 c. of chopped fresh tomato, 2 Tbsp. chopped fresh basil leaves and 1 oz. of crumbled goat cheese. Drizzle with 2 Tbsp. of extra-virgin olive oile and 1 tsp. of balsamic vinegar. Toss gently, season with salt and pepper, and serve warm or at room temperature.
It’s like summer in a side dish. So good and so easy!
