Smores Bites
Remember the giant marshmallows from last summer? Way too big for s’mores, but Jaclyn from Cooking Classy has shared bite-sized s’mores that are just my speed.
My favorite version calls for Ritz and mini marshmallows. Back when I was a “poor” American girl living in Hong Kong, I had no way to bake. Yes, a crying shame for this baked good fanatic. I still remember the excitement when our apartment received toaster oven for Christmas! (Toasting good times with Rebecca, Lisa and Stephanie) Marshmallows on Ritz was our new-found delicacy!

Of course, adding chocolate makes these just the right amount of goodness to tame my sweet tooth.
