After reading Erin’s post on eating your greens, I’ve tried working my way through a Costco-sized bag of spinach. I feel like Popeye, ready to battle the man-eating shark jumping out at me.
Here’s one spinach salad recipe that is perfect in the winter, sometimes we call it the “P” salad. Can you guess why? What’s in your favorite spinach salad?
Spinach Salad Recipe
8 cups baby spinach leaves
1 pear, sliced
1 cup pomegranate seeds
1 cup sugared pecans
1/2 cup Parmesan cheese strips (use a peeler and a block of Parmesan)
If your pomegranates are all gone, substitute halved red grapes – just as yummy!
