Last night, a group of friends and I celebrated Thanksgiving. It’s now 4:30am and my stomach and chest are rebelling from too much delicious but heavy food. In the midst of the many casseroles, hot dishes and sweet offerings, you might want to consider a fresh, healthy Thanksgiving side dish.
Gluten-Free Goddess offers up this plate of Quinoa Salad with Pears, Baby Spinach and Chick Peas in a Maple Vinaigrette. It’s gluten-free and vegan approved, and seems like something your meat-and-potatoes guests would like, too.
