Frozen Fruit Cocktail
I’m swimming in peaches since my harvest totally rocked this year. What to do with so many peaches before they go bad? Fruit cocktail. And I’m not talking about the nasty kind with smooshy maraschino cherries in it from the grocery store. I’m talking about frozen bits of deliciousness that you can bust out all year long. I’m talking about winning friends and influencing people in a tiny little dish.
Did I also mention that it’s super easy and takes way less time than canning all of those peaches?
Frozen Fruit Cocktail
6 cups cut up peaches
2 cups sugar
1 lb. seedless grapes (green or red)
1 2/3 cups crushed pineapple (20 oz. can)
1/4 cup lemon juice
1 cup orange juice

Cover cut up peaches with sugar. Allow to stand until juices flow and mix well. Stir in all other ingredients. Freeze in zip-lock bags (I go for the quart size). Serve slightly frozen.
This is another recipe I’ve inherited from my mother-in-law. This is a Sunday dinner staple at the Herrscher household and a family favorite.
