Easy Appetizer That Your Friends Will Beg You to Make Repeatedly

Once upon a time when I was a wee lass, I watched my own parents prepare for friendly neighborhood gatherings by preparing this appetizer. Even at a young age I noticed how lazy they were easy this recipe was to prepare.

Fast forward a few years to my own pot-luck-party days and there I was, scratching my head at the grocery store with the instructions “bring an appetizer to share”. Then I realized that this would be a piece of cake. That I had the recipe of a crowd pleasing dish already seared into my brain.

I made my first tentative batch. It was very well received. I then proceeded to make this dish for every party…for a solid decade.

Earlier this spring I thought that ten years of Tortilla Roll-Ups might be tip-toeing on overkill so I decided to branch out. I did what anyone in this position would do—I asked Twitter for help. A few people jumped in and offered ideas:

In the meantime, I let my super swanky friend throwing the party know that I was on the hunt for something new and fabulous. To which she replied:

“I was hoping you’d make those roll-ups.”

Well, alrighty then. Tortilla Roll-Ups, coming right up.

Tortilla Roll-Up Recipe


-1 (8 ounce) packages of cream cheese

-1 small can of diced green chilies

-1/8 Cup diced jalapeños (just give those slices a rough chop)

-1 package of flour tortillas

-garlic salt


  1. In a bowl, combine room temperature cream cheese with green chilies, jalapeños and a sprinkling of garlic salt.

Expert food styling, FTW!

  1. Spread cheesy mixture on flour tortilla, approximately 1/4 inch thick. (I find that warming the tortillas in the microwave for 10-15 seconds make them nice an pliable for step #3.)
  2. Roll up filled tortilla.
  3. Repeat until you run out of cheesy spread.
  4. Place rolled tortillas in the fridge to cool. (The cooler the cheesy mixture, the easier to cut.)
  5. Remove cooled tortillas and cut into inch wide slices.
  6. Arrange them proudly on a platter so your guests can enjoy.

Keep in mind, these are simple and they don’t look like much, so expect your guests to initially blow you off when you offer them an appetizer. Make them try one. Trust me. No one has every tasted one and said, “Eh. They’re just so-so.”

And, I’m sorry I don’t have photos of the finished product. I made these for Rachael and she scarfed them up before I could snap a photo.

    Ooh! I never considered those little freshy tortillas from Costco! That would complete those appetizers! 🙂

    I read this post this morning, and later was in a meeting and actually found myself thinking about these suckers. They look SO GOOD! I bet they're awesome with those fresh-y tortillas you can buy at Costco…
